Shrimp and rice

I am no chef, but I am a bachelor that needs to feed himself. On a summer day like it is right now, something light and easy to make in the kitchen is the way to go.


    • 1 lb jumbo shrimp
    • various peppers
    • green onions
    • Cajun seasoning salt
    • 1 cup of rice
    • 1 small lime
    • Extra virgin olive oil


First step

Start your rice first. It will take the longest out of all of it. Bring to a boil, cover, reduce heat and in about 20 minutes the rice will be ready,

Second step

Put the peppers and green onions in a pan on medium heat with evoo. Cook it for about 5 minutes.

Add in your shrimp and mix. Cut your lime and squeeze onto the mix. Use a little bit of seasoning salt over all of it.  After 2 minutes flip shrimp over and reduce heat.

Add a tablespoon of butter into the mix. Once it is melted, mix the rice into the shrimp and serve. 20150624_155058_013 This is enough for a full grown man to have 2 different servings. I ate mine for lunch and will have some for dinner. Two meals cooked in less than 20 minutes. I added avocado and a cucumber to the mix for my veggie/healthy food intake.
